We missed the Summit egg hunt unfortunately due to a previous commitment. We did attend an egg hunt put on by my kids soccer league, however, and I thought I would share how they approached it in case it's useful for next year.
They limited the hunt to 100 and upon registering each child drew a number. Every egg on the field was numbered from 1-100 and there were 11 eggs with each number. Children were only allowed to pick up eggs with their number on them and baskets were checked at the end to ensure each child had only their number.
It was very labor intensive for the organizers, granted, but every child was able to find eggs and there was no frenzy to grab all of the eggs. The kids actually had to hunt for eggs! From the parents perspective it went off very well.
Maybe some variation of this would work though I can see where on a larger scale it could be challenging to implement. Food for thought, anyway...

Hi,
Another idea that may work with a large crowd egg hunt would be leaving the eggs empty with a 'treat center' when they turn in the found eggs they get a small bag with some treats. That way you can recycle the eggs for another year and everyone no matter how many eggs gets equal treats.

I like this idea. I really don't want my kids having such a ridiculous
amount of candy - it's more the thrill of the chase right?
How about this - have an equal number of eggs numbered 1-10. The first 5
kids who find the sequence 1-10 can turn in for the best goodie bags. The
next 10 kids get the better goodie bags, and the rest get the good goodie
bags. The work to label the eggs is minimal as they will be reused. Bags
could have a mix of candy and cool toys, like slime or silly butty - that
kind of thing.
